Most masonry that fails around here does not fail because of the stone. It fails because of what is underneath it and what happens to the water. A patio laid on four inches of unconsolidated fill will heave the first winter. A wall built without drainage behind it will lean by its third spring, because saturated soil pushing on a wall weighs roughly twice what dry soil does.
That is the part of this work you cannot see once it is finished, and it is most of the job. Excavation to a real depth, a compacted base in lifts rather than one dumped layer, drainage stone and pipe behind every wall that retains anything, and grade that moves water somewhere deliberate. The stone on top is the last day of a week's work.
